Featuring Sunflower Coffee House's Grand Opening

Happy October!

This month the Sunflower Coffee House is introducing you to a different kind of specialty coffee: The Marta Rubi.

This is a coffee from the Tolima region in Fresno, Columbia. It is grown at an elevation of 1,500

MASL (meters above sea level). Before arriving at Sunflower Coffee House The Marta Rubi coffee fruit goes through a unique 60 hour anaerobic natural process. First, the coffee fruit (a cherry with mucilage intact) is handpicked and placed in a stainless steel oxygen-less tank for 60 hours. Without oxygen, unique yeasts and lactic acid bacteria break down the natural sugars inside the sticky fruit mucilage surrounding the cherry. This fermenting process supercharges the fruit flavors much more than traditional open-air processing. The producer tracks time, temperature, and pH levels closely during these 60 hours. Following that, the coffee bean enjoys sun exposure with intermittent drying sessions over the next 35 days. The process ends with mechanical finishing touches and a two-month chill-out period in grain-pro storage for optimal maturation. This all allows for this meticulously crafted coffee to reach the peak maturation and allows you to taste its unique fruity flavors.

After we roast the green coffee, you finally get to taste the cup. It is bold and complex. The flavors are layers of deep berry richness and subtle floral notes that unfold with each sip. We taste wild blackberry, red currant, and fine aged merlot flavors.
